Vinification: in thermo-conditioned stainless steel, with soft pressing of the grapes and brief must-bleeding after 12 hours of maceration in contact with the pommace

Refinement: in stainless steel, with a few months of bottle ageing before going to market

Number of bottles produced annually: 360,000

Best drinking date: before three years of age, but it is better drunk when young in order to appreciate its aromatic fragrance

Food pairings: A splendid wine with salamis and cold starters, (perfect with aubergine parmesan) and excellent with stewed or grilled fish, grilled meat and poultry, spicy dishes and rabbit chasseur.
